Shakshuka

A simple, hearty meal that's perfect for breakfast, brunch, lunch, or dinner--Shakshuka is a flavorful Middle Eastern and North African dish made with eggs gently poached in a rich tomato sauce seasoned with onions, peppers, and warm spices.
Ingredients:
- 2 tbsp olive oil
- 1 medium onion, diced
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 1 tsp paprika
- 1 tsp ground cumin
- 1 can (14 oz / 400 g) diced tomatoes
- Salt and pepper, to taste
- 4–6 eggs
- Fresh parsley or cilantro, chopped (for garnish)
- Crusty bread, for serving
Directions:
- Heat the olive oil in a large skillet over medium heat. Add the onion and bell pepper and cook until softened, about 5–7 minutes.
- Stir in the garlic, paprika, and cumin, and cook for 1 minute until fragrant.
- Add the diced tomatoes, season with salt and pepper, and simmer for 10–15 minutes until the sauce thickens slightly.
- Make small wells in the sauce and crack the eggs into them.
- Cover the skillet and cook for 5–8 minutes, or until the egg whites are set and the yolks reach your desired doneness.
- Garnish with fresh parsley or cilantro and serve immediately with crusty bread.
